10ml White Balsamic Vinegar With Blosom Honey by “Wisdom Of Nature”
30ml All Organic Extra Virgin Organic Olive Oil
70g curly red lettuce
1 medium roasted red bell pepper
6-7 cherry tomatoes
3 tbls Xigalo Siteias
Salt to taste
Roughly chop the salad leaves and place them in a large bowl. Grill the red pepper until its colour has evenly changed. Let it cool and then take the outer skin off. Cut it into thin slices and add to the salad leaves. Cut the tomatoes in half (if small), in fours (if large), and add them to the bowl.
Salt the salad and add the dressing. Mix and serve on a big plate, add three spoons of Xigalo Siteias to garnish.
Note: Xigalo Siteias is a white goat cheese, it can be substituted with Ricotta or any other white goat cheese.
