Pasta dough ingredients
150g flour type 00
1 tbls olive oil
salt to taste
Place all the ingredients into a bowl and mix to an even consistency with a wooden spoon. Place the mix on a lightly floured surface and massage the dough. Let the dough stand for 15 minutes. With the help of a pasta machine, choose the cutting shape and create the pasta that you like (tagliatelle, linguine etc.). Boil for 3-4 minutes.
6 cherry tomatoes, sliced into quarters
5 basil leaves, finely chopped
1 spring onion, finely chopped
1 clove of garlic, finely chopped
1 tablespoon of All Organic Greek Garden Olive Tapenade
2 tablespoons of olive oil
choped parsley and Katiki Domokou (curd cheese) for garnishing
Mix all the sauce ingredients together in a medium sized bowl, before adding the pasta. Mix again, using tongs, until the sauce is well blended with the pasta. Serve in a pasta bowl. Add a spoon of Katiki Domokou to garnish and a bit of chopped parsley.
